PURPOSE OF POSITION: The Food & Beverage General Manager is responsible for the efficient and effective operation of lodge restaurant(s), ensuring all front-of-house services meet Deer Valley Resort's high standards. This role oversees service style and technique, optimizes staff and facility use, and drives financial performance across assigned business units.

RESPONSIBILITIES:

Leadership & Staff Management

  • Hire, train, supervise, and manage all front-of-house staff within the Empire Lodge area: Empire Canyon Restaurant, Cushing's Cabin, Fireside Dining and Chute Eleven.
  • Provide daily direction to management and team members; delegate and follow up on assigned tasks
  • Collaborate closely with the Executive Chef on team hiring, performance management, and operational goals
  • Motivate and develop team members, identifying and promoting high-potential staff
  • Ensure employees uphold grooming, hygiene, dress, and safety standards


Operational Oversight

  • Direct all front-of-house operations to ensure consistency in service, food presentation, and quality
  • Ensure restaurant cleanliness, professionalism, and guest-readiness seven days a week
  • Maintain a positive presence in the restaurant, especially during peak service hours
  • Coordinate with executive leadership, including the VP of Food & Beverage and other directors, to enhance operations


Financial & Administrative Management

  • Control labor costs through forecasting, scheduling, and staffing adjustments
  • Execute administrative functions such as payroll, recruiting, discipline, and policy implementation
  • Monitor overall profitability through effective cost control measures and efficient use of resources


Systems & Compliance

  • Oversee the operation and accuracy of key systems: InfoGenesis POS, Workday, OpenTable, and Tock
  • Ensure compliance with health and safety codes and maintain sanitary working conditions
  • Hold required certifications (ServeSafe, TIPS, DABS) and enforce related standards across the team


Guest Experience & Service Standards

  • Maintain high standards in service style and technique across all FOH positions
  • Foster a welcoming and professional guest environment, especially during busy, high-volume periods
  • Support the Beverage Director in curating and executing beverage offerings aligned with dining concepts


QUALIFICATIONS:

  • High school diploma or equivalent
  • Minimum of 5 years of independent executive-level leadership in both fast casual and fine dining operations
  • Broad knowledge of high-level food service standards across quick service, casual, and fine dining settings
  • Strong organizational skills with attention to detail; able to stay calm and focused under pressure
  • Proficient in Office 365 and familiar with operational systems (POS, scheduling, reservations)
  • Utah ServeSafe Manager Certification, TIPS certified, and DABS On-Premise Retail Manager Certification (or ability to obtain)
  • Knowledge of wine, beer, and liquor to support beverage program development
  • Strong problem-solving and decision-making skills, especially in high-volume environments
  • Willingness to work long hours, weekends, holidays, and varied shifts; ability to lift up to 50 lbs
  • Overtime required as needed, especially during peak seasons
